Japanese Festival Food: Gyūtan

Gyūtan, grilled beef tongue, is one of Sendai’s most iconic regional dishes, but it is also a popular dish nationwide. Popular enough that it is relatively common to find a Gyutan food stall at a festival. It is still not as common as the likes of yakisoba or okonomiyaki, but gyūtan appeals to enough people for it to have found a secure position among the more "premium" offerings at modern festival stalls.


As festivals have expanded beyond the classic noodles-and-snacks lineup, gyūtan has become one of those dishes that signals a slightly upgraded experience. Something hearty, regional, and a little special. You won’t see it at every 'matsuri', but when a stall does offer gyūtan, it tends to draw curious newcomers and loyal fans alike, all looking for that smoky, tender slice of Sendai flavor.


At festival stalls, gyūtan is usually served in thick slices, grilled over high heat until the outside is lightly charred and the inside stays tender. The meat is seasoned simply with salt or a light tare sauce, letting its natural flavor shine. Some stalls might pair it with a small portion of rice or a sprinkle of chopped green onion to balance the richness.
