TtoE Eringi King of the Bento Lunch

This week I scored eringi mushrooms, also known as king trumpet mushrooms. The packages at my local supermarket were priced at 100 yen with two to three mushrooms per pack.
Japan has so many varieties of mushrooms, and I wondered where eringi mushrooms originated. So I did what I always do - I looked them up. It turns out that this particular mushroom originated in Europe and Central Asia. Cultivation was introduced in Japan in the last 30 years.
I fried them in a little butter and soy sauce and seasoned them with pepper.

They pack a lot of umami flavor. This is now one of my favorite bento box items.
