Roll your own sushi rolls in Kanazawa

I recently traveled around Kanazawa City (Ishikawa Prefecture) and we visited a very interesting place for our lunch. COIL is a modern-style restaurant, that mainly offers hosomaki sushi, the well-known sushi rolls. However, the sushi here is not served as in usual restaurants - you are rolling your sushi yourself and get a very unique food experience!

There are different options and we chose the "6 dishes + tempura set" for 2,180 yen, where you can pick 6 different ingredients for your very own sushi roll via a tablet. Ordering is available in Japanese and English, which makes it easy for foreign visitors. For another price, it is possible to decide on another number of ingredients. And additionally, you also can add a tea set or monaka soup to your menu. 

There are many ingredients to choose from for your sushi rolls, even for someone like me who doesn't like seafood! I picked roast beef, raw ham, camembert cheese, cucumber, pickled paprika and marinated red cabbage, all things I like and there would have been even more combinations. Of course, the others who visited the restaurant with me went with the big variety of seafood which Kanazawa is famous for.

Served with your ingredients, you get 4 prepared sushi rolls and a plate with tempura which fitted nicely with the sushi lunch. 

It was really fun to roll my own sushi rolls, which I haven't done in ages. I rarely make sushi at home. Even though it was also a bit difficult to make a nice roll and mine didn't close nicely all the time, because I probably put too much inside. This made it difficult to eat, because the long rolls were about to fall apart, but this didn't change the taste experience.

It was most interesting for me to try sushi in such a different way - not the usual salmon, cucumber, egg, etc! Or would you even think about putting roast beef together with marinated red cabbage inside a sushi roll? Or ham with cheese and cucumber? It was a real adventure in Japanese cuisine which I will never forget and would also like to try out at home.
