Daiwa dairy farm delights from down south

Delight your senses with a gift set of cheese and yoghurt from southwestern Japan.


Bordering the Kyushu mountains and the Kirishima mountains is the most delightful city of Kobayashi in Miyazaki Prefecture. Picture green pastures, an abundance of nature, a fresh breeze, crystal clear water and good food.


Today join me as I share with you some creations from the local Daiwa dairy farm.


The selection from Daiwa Farm consists of:

1. Yoghurt x 2

2. Mozarella

3. Robidaiwa soft cheese

4. Tomodaiwa hard cheese


Let me share with you how I prepared the cheese and yoghurt.


Yoghurt - unadulterated, as is. Sublime, silky and sensual. Nothing better.

Mozarella – I lovingly jiggled open the water-filled packing to find the most perfect ball of goodness. To keep the focus on the freshness of the cheese I plated it with rocket leaves, fresh garden baby tomatoes and basil leaves. A smashing of black pepper to bring out the creaminess and then a drizzle of balsamic glaze for all the flavours to sing together. Enjoy with a cold glass of sauvignon blanc.

Soft creamy Robidaiwa cheese – a perfect match with wholemeal crackers and homemade sour plum and orange jam. A classic taste sensation! For a bit of a zing, I added some shiokonbu (salted dried kelp) onto a few pieces which went down a treat with a cold icy ale. Perfect for a hot summer afternoon.


Tomadaiwa hard cheese – I like to make use of ingredients already in the fridge so when I saw some little plump eggplants and shiso in the vegetable drawer, a symphony was created. Quick and easy cooking is like music to the soul. On to the sliced eggplant lies a slice of the cheese, topped with a shiso leaf, kept in place with a toothpick and lightly fried in olive oil until crispy. A glass of whatever wine you have opened, turn up the music and lift your soul.
