Good Effort, but...
I always respect ramen restaurants trying to do vegan ramen, because I know it is really difficult to do well. Soranoiro is one of the options that will pop up for sure if you search vegan ramen, but it is unfortunately one that I would not personally recommend. Without using eggs in the noodles, I find their texture to be a bit too close to pasta for comfort. The veggie-heavy soup that infuses a good amount of tomato also does not help. While it is not bad, it is also not a convincing case, especially when there are 6 other ramen shops right around it for non-vegans.

Great options for vegans at Tokyo Ramen Street
If you're passing through Tokyo Station there are numerous places to eat, including Tokyo Ramen Street. The collection of 8 different ramen shops is super convenient if you're craving noodles, and Soranoiro is extra helpful if you have dietary requirements (vegetarian, vegan, or gluten-free). There are ramen types for all of those diets, plus your standard ramen offerings for the meat eaters out there. Prices for the vegan ramen are around 1200 yen.
