The Niigata Kushikatsu Center is located within the Cocolo shopping complex at Niigata Station, so it's a convenient spot for a feed if you're transiting through. They have a good variety of items to choose from, including both meat and vegetable-based offerings. There's a decent amount of seating but it can get busy depending on the time of day you visit.
