Cafe with light meals and desserts

R-Kitchen is a cafe in the Mito area of Ibaraki, and they have a variety of light meal options alongside some delicious desserts. On my visit I had a melon cake which was really delicious and fresh tasting -- and it's a fruit I don't often see incorporated into cakes. They had some good looking pastas and quiche on their meal menu if you're looking for something more substantial than just sweets.
