Niigata's famous hegi soba

Niigata has a lot of fantastic foods that are unique to the prefecture, and one of those is hegi soba. I had read about Kojimaya on the Niigata Prefectural Tourism Website as well as the Tokamachi Tourist Association page, and since it isn't too far from my home I had to visit. There are a number of different meal sets here, so you can get your hegi soba accompanied with tempura, chirashizushi and more. The hegi soba noodles are perfectly cooked and really do have a unique flavor and texture compared to your regular soba noodles. If you're in the area I would highly recommend trying out this Niigata specialty. There can be a short wait depending on the time you visit - it's a popular spot. They are open from 11am until 8.30pm, 7 days a week.
