Good Consistancy
Ippudou is great for one good reason: you always know that it will be great. They might not blow any minds, but the noodles are always good no matter when you go. It is very reassuring because you know what you will be getting. It is always a great first tonkotsu ramen for any visitors new to his soup. Ippudou's tonkotsu is always rich but not overpowering. If I was to introduce people to tonkotsu ramen, this is where I would start.

Fukuoka Style Ramen
Of all the restaurants I've been to post-Corona, maybe this felt the safest. When we arrived at the location on Hwy. 171 in Minoh City, our temperatures were checked. All of the seating besides a handful of tables is sort of sectioned off for two people already, with little walls between, and all the steam from the ramen-making keeps the humidity levels safe during Japan's dry winters. The staff all wore masks and the side dishes like spicy moyashi and garlic were brought out by request instead of taken by a container on the tables. I tried the miso tonkotsu ramen, which has a bunch of vegetables and ginger in it. Just the ticket on a cold day. I tried my husband's ramen too and it was also really good. The noodles are thin, typical of ramen in Fukuoka. As usual, a regular bowl is more than enough to fill me up. They served chilled rooibos tea, which I didn't expect, but it was so good.
