    Light ramen, not for equestrians

    Around Shikamagaya Station, a transit hub for Keisei and Tobu train lines, there are a few places for a fast meal. Mononokokoro is very clean and the concept is fastidious about details. The ingredients and furnishings are all domestic, from the wheat used for in-house noodles to the tableware. The napkins are made with discarded tea plants and the ramen bowls are made to order. I had torishio ramen in a light broth with two big slices of poached chicken and greens. It’s flavorful. Look out for kombu su vinegar among the condiments on the counter. Itgoes well with ramen. Warning to horse lovers - this shop does horse meat donburi and takeout.
