Where can I find flour that is not white wheat flour?

This might be a bit of a cliche, but as a German I seriously miss baking bread. Unfortunately I haven't been able to find any flour that is not white wheat flour. Does anyone know where I might be able to get some other types of flour? I would even be happy with just whole wheat.

Tomiz has a lot of baking supplies. The one closest to me is in a bigger city, in a デパ地下, as a section of the supermarket. I've heard of 業務スーパ or other restaurant supply shops selling things like that too, sometimes in larger quantities only. Probably rice flours will be more popular here than rye flour, but still... more than normal white wheat flour. If you don't have nearby options, there's always Amazon?

Try Costco, if you have one nearby. When I lived closer to a Costco in Tokyo they had various options including things like almond flour.

I always go to Kaldi! I have found whole grain flour their before! They have some other flours too! Tomiz is also a good choice. They are a baking specialty shop so they have a lot!

Hiya! Buckwheat flour, sobako in Japanese (そば粉OR蕎麦粉) is great for baking bread. As Japanese people use it for soba making, it's widely available even in supermarkets on the country side. In the supermarkets around here, it's not lined up with flour, but where the azuki beans and warabimochi ingredients are. Of course Kaldi and Costco offer the widest range of non-white-wheat-flour flour selections.

Try Yamaya or Jupiter :) or order in Amazon My husband is into baking and we usually buy our flour in costco or just the cheapest all purpose flour in Yaoko. I think he also bought whole wheat flour there to make his sourdough ^_^

@helloalissa I got a 業務スーパ near by, but they also just have white wheat flour. Tomiz seems to have a good range though, thank you!

@Kobakko I have never bake with buckwheat before, but it sure sounds interesting. I might give it a try some time.

@Bella Yamaya doesn't have any and the Jupiter near me just closed yesterday because of covid-19... But I guess in case of emergency there is always Amazon :)

As you said, the best option right now might be Amazon. I found some whole wheat flour (全粒粉) in Seijo Ishii. It's a chain of supermarkets that are on the expensive side, but sell many good quality foreign products. There are many shops all around Tokyo and the one near my house is still open, so you could check it out if there's one near your place.

@Kobakko do you literally just sub the same amount of buckwheat flour for whatever flour you'd usually bake with? I'm curious and would love to try it sometime! If you have a recipe or something that uses it I'd love a link :)

@genkidesu Buckwheat doesn't contain any gluten, so in most cases substituting all flour for buckwheat flour is not possible. Also, buckwheat flour calls for more liquid than white wheat flour. You can easily substitute parts for a more rustic flavor, though. You can find my favourite recipe here: https://biancazapatka.com/en/buckwheat-chia-bread/

@Kobakko thank you! Super helpful - I'm not an expert baker by any stretch so the explanation helped a lot!

What sakura apps / websites are you using in 2024?

What websites or Apps are you using to keep track of the bloom stages of cherry blossoms in 2024? I usually use a mix of Tenki.jp, Yahoo and Jorudan and another one that I have forgotten! (I delete them at the end of each season to free up space on my phone). I occasionally use the app from JMA, but I don't like its set up. Are there any other Apps or websites you recommend? TIA

What's in your toshikoshi soba?

What do you put in your toshikoshi soba? One year I sauteed some chicken and naganegi to start a broth augmented with tsuyu, cooked the soba separately, and served the broth with kamaboko slices.

Transferring Pension

I'm currently sorting through EVERYTHING I bought back from Japan with me, so you'll get all your new blogs soon. I came across some documents that I actually completed when I came back from Japan, which was to do with pensions. This took me a while to figure out because it was complicated. Would you like to know how to transfer your pension to you from Japan? People say you can't. The things is... you can.

My FIRST Log! Would You Like to Hear it?

In my last post I asked what you would like to hear from me now I have left. I was digging through some stuff the other day and I found my very FIRST book log that I kept when I toured Japan originally. I was thinking about typing it up and reminding myself of what my younger self thought of Japan. Would you like to hear about what I got up to? I'm not sure if I can even remember! HA!!
